Recipe for coconut jasmine rice

A creamy, tropical twist on classic jasmine rice.

Servings: 4 | Preparation time: 5 min | Cooking time: 20 min.

Ingredients:

  • 1 cup Jasmine rice

  • 1 cup coconut milk (Full fat for more filling)

  • ¾ cup Water

  • ½ tsp Salt

  • 1 tsp Sugar (or coconut blossom sugar)

  • 1 Panda Leaf or ½ tsp Vanilla extract (for flavor)

Optional ingredients:

  • Roasted Coconut flakes

  • Lime zest

  • Lemongrass

Preparation:

  1. Rinse rice until the water is clear.

  2. Mix rice, coconut milk, water, salt, sugar and pandan leaves in a pot.

  3. Bring to a boil , then reduce heat, cover and Simmer for 15 minutes .

  4. Covered Let rest for 5 minutes, then fluff with a fork.

  5. Garnish with toasted coconut flakes.

Tips:

✔ Perfect for Thai curries, grilled shrimp or mango desserts
✔ For the vegan version, omit sugar or use maple syrup.
