Recipe for coconut jasmine rice

A creamy, tropical twist on classic jasmine rice.
Servings: 4 | Preparation time: 5 min | Cooking time: 20 min.
Ingredients:

1 cup Jasmine rice
-
1 cup coconut milk (Full fat for more filling)

¾ cup Water
-
½ tsp Salt
-
1 tsp Sugar (or coconut blossom sugar)

1 Panda Leaf or ½ tsp Vanilla extract (for flavor)
Optional ingredients:

Roasted Coconut flakes

Lime zest
-
Lemongrass
Preparation:

Rinse rice until the water is clear.

Mix rice, coconut milk, water, salt, sugar and pandan leaves in a pot.

Bring to a boil , then reduce heat, cover and Simmer for 15 minutes .

Covered Let rest for 5 minutes, then fluff with a fork.

Garnish with toasted coconut flakes.
Tips:
✔ Perfect for Thai curries, grilled shrimp or mango desserts
✔ For the vegan version, omit sugar or use maple syrup.
