Recipe for fried jasmine rice

Fast, tasty and better than takeaway!
Servings: 3 | Preparation time: 10 min. | Cooking time: 10 min.

Ingredients:

  • 2 cups cooked jasmine rice (old rice works best too)

  • 2 tbsp sesame oil

  • 2 Eggs , beaten

  • ½ cup mixed vegetables (peas, carrots, corn)

  • 2 tbsp soy sauce (or Tamari for a gluten-free version)

  • 1 tsp fish sauce (optional)

  • 2 Spring onions , chopped

Optional proteins:

  • Shrimp

  • chicken

  • tofu

Preparation:

  1. Heat oil in a wok, whisk eggs and set aside.

  2. Sauté vegetables for 2 minutes, then add rice.

  3. Mix with soy sauce and fish sauce.

  4. Stir in eggs and green onions. Onions.

Tips:

✔ Use cold rice to avoid a mushy dish.
✔ Add chili paste for more spice.
