Servings: 4 | Preparation time: 15 min. | Cooking time: 20 min.

Ingredients:

  • 1 cup jasmine rice

  • 1½ cups Water

  • 1 cup fresh pineapple pieces

  • ¼ cup Raisins or cashew nuts

  • 1 tbsp curry powder

  • 1 tbsp Coconut oil

Optionally:

  • turmeric for the color

  • Sliced chicken

Preparation:

  1. Cook rice as usual.

  2. Fry pineapple, raisins, and curry powder in coconut milk and oil.

  3. Fold into cooked rice.
